1/2 lb | 227g / 8oz | Salted cod - soaked overnight in |
3 cups | 711ml | Milk |
4 1/2 cups | 1066ml | Water |
3 cups | 711ml | Milk |
1 1/2 cups | 93g / 3.3oz | Flour |
1 teaspoon | 5ml | Baking powder |
1 teaspoon | 5ml | Onion - cut 1/2" dice (small) |
1 teaspoon | 5ml | Sweet red pepper - cut 1/2" dice (small) |
2 | Garlic cloves - crushed | |
1/2 | Cilantro - chopped | |
Oil - for frying |
Drain salted cod. Boil fish in 3 cups of the water and the milk until tender, about 20 to 30 minutes. Remove cooked fish from liquid, shred and set aside to cool.
Make a batter with the flour, baking powder and remaining water. Add cod, onions, peppers, garlic and cilantro. Deep fry spoonfuls of the batter in oil heated to 350 degrees until golden.
This recipe yields 30 fritters.
